Did you know there is no one else on this entire planet who is better at being you, than YOU?! I am here to remind you, that YOU my friend, are amazing. My wish for you is that you find happiness in yourself. Before anything or anyone else, you realize your worth and how very necessary you are in this world.
Valuing every moment for what it is
Ever have one of those days where everything is going just perfect? You woke up on the right side of the bed, you had a great hair day, your sweet thang was unexpectedly extra thoughtful, the kids were angels, the fur babies didn't cause any ruckus, and it felt like the sun was shining just for you.
The good, the bad and the ugly...
I'm here to remind you, it's okay to have a bad day. You are not a failure. Not every day is going to be rainbows and butterflies but THAT'S OKAY my friend! Our worst days involve pain, anger, doubt, even hopelessness sometimes but the true beauty and growth, is in the struggle.
Your ability to get back up, your willingness to stare your obstacles in the face, to overcome your adversities, to BOSS UP, is what gives true value and meaning to your struggles. The worst days are actually some of the most meaningful times in our lives because they make us better. We become stronger, and more compassionate of everyone around us, including ourselves.
So on your bad days, when you want to throw in the towel, let your goals fly out the window and emotional eat or over indulge in that wine, remember it's okay to think 'this day sucks', it's okay to feel what you're feeling, and it's okay to take a little time out to rest.
But don't hide from your feelings, and don't ever, under any circumstance think it's okay to quit yourself, your dreams or your goals. You worked too damn hard to only come close to your dreams.
Remember, in the long run the worst days give us the opportunity to make us more joyous and appreciative than we ever thought possible.
Yes, sometimes it will be hard, but nothing good is ever easy and you my friend, are good stuff.
You are worth the struggle, you can and will achieve your goals and dreams.
And not in spite of the struggles, but because of them.
I know what you're thinking...BEANS?!?! Yeah baby, beans are the magical secret ingredient! I promise you, if you didn't see them go in these, you'd never know they were there. I won't tell the kids if you don't...or maybe you'll want to so they leave your tasty treats alone! Either way I'm not judging, haha!
-Preheat your oven to 350 degrees and spray your muffin tin with cooking spray.
-Put everything into the food processor or blender and run until smooth, scraping down the sides as necessary. I find it works best if you blend the beans really good on their own first, then add the eggs and other wet ingredients. Blend until smooth and then add the dry stuff.
-The batter will be thin, don't worry about it. Evenly distribute in your muffin tin.
-Top with your desired goodies (nuts, coconut, etc.)
-Bake for 17-22 minutes, but make sure to do the toothpick test before pulling from the oven.
-Get them out to cool on a wire rack.
These are seriously SO delicious!!! At only 110 calories a pop, you can feel good about eating this delicious little snack. They are super moist and dense. Be sure to store in the fridge so they don't get moldy, however make sure they are completely cooled before putting them in there. Try them, you won't be disappointed!
